I got to go with clogged fuel pickup. It may be getting enough wheel at idle, but when you ask for power it cann't provide enough fuel. If rust or crap go suspended in the fuel when you rolled would have taken time to get sucked up into the intake. It just seems to fit.

I still like electrical for this one. Any chance of a wiring harness or some lights from a trailer hitch, off road lights or electric fuel pump etc. touching exhaust system or something else hot while you were upside down?

when my truck got flipped on its side then flipped back over the battery got knocked loose some and it pulled one of the wires out of the under hood fuse box.
it also broke the motor mount on the drivers side my truck landed on the passenger side.
my truck would not start when I tried for the first time until I found that wire loose I fixed it and it ran fine after that.
think of it this way a motor weighs 200 to 300 pounds and if it get flipped on its side it will move some in the engine bay and can pull or pinch a wire.
also do a quick check and jack up the tranny and see if the motor moves off the motor mounts all that holds your motor in is a 2 inch piece of rubber on both sides.

I didnt give the whole story. I spent 6 hours replacing both engine mounts, all flud, PS line, pulling off body panels, re-seating 2 tires and tracing the whole harness(save for the taped up tails, but no damage to tape usaully means no damage to wires) not to mention pulling the inner fender and core support back into place and all in the middle of the dessert!! But i had alot of help and should send a 12pack to every one that helped me. But for sure one of the most crazy scrambles to get the truck on the trail i have ever done.

you said you replaced both engine mounts. if they both broke cause of the roll over then you engine was moving around alot upside down, even if only for a minute or 2 it only takes a second to break a wire. you said you dont see any visual damage to wires but wires can be broken by pulling and not show any damage on the outside. the end result of this is the wires touch at rest but when shaken and moved seperate long enough to break connection.
the best way i can think to try and pin point these breaks is a pull test. start the truck and start wiggling and tugging on wires and harnesses rather than shaking the truck this should help narrow down the area to look into
