1980 20R Engine Bay clean up and last minute Troubleshooting

I spent the weekend de-smogging my 1980 Pickup while installing a Weber 32/36 DGEV (http://imgur.com/a/1WBvk) and a new Exhaust system (pics to follow.)

List of modifications and parts:
De-Smogged, the only vacuum lines left were to the charcoal canister, Master Cylinder, and Distributor.
EGR System Removed and Capped using LC Engineering EGR Block Plate Kit, and a section of the old line with a plug fitted in it for the intake side of the Air injection.
Mechanical Fuel Pump removed and capped using LC Engineering Fuel Pump Block Plate Kit
Replaced with Redline-Weber Electric Fuel Pump and Fuel Pressure Gauge Kit Added a relay from Autozone to power it, switched by the accessory circuit, as well as the Electric Choke. Put a 7.5 amp fuse just prior to the pump.
Redline-Weber 32/36 K746 DGEV Kit via EBAY Store My4n
I used the supplied adapter to reroute the PCV line to the unused EGR barb on the intake manifold.
Added a LCE Pro Spiral Spacer for giggles.

Pacesetter 70-1080 via EBAY store Never Enough Auto
2" exhaust tubing and muffler from Autozone.

New Vacuum tubing, vacuum caps, wire, terminals, knowledge, advice, and loaner tools from Autozone.

Things left to do:
I am waiting on an EGR Crossover Block Plate Kit and K&N Breather w/Adapter from LC Engineering.
I am also picking up a new throttle cable from O'Reillys in the morning.
I need to figure out how I am going to plug the Air Injection Ports on top of the new header.

I am so close to finishing I can taste it. I took her for a test drive and every thing seemed peachy till I looked in the engine bay and I was soaked with coolant. I think it was being pushed out of the reservoir by the water pump. When I removed the old Carb I just capped off the barbs on the intake for the choke. Should I have run a bypass? and if so how do you do that and avoid the throttle linkage?

I took it for another quick drive tonight. I'm hearing a vacuum leak in the carb under load so I need to look into that, but I have gone to barely doing 60 trying to push the peddle through the floor to still pulling at 75.

Any suggestions on how to do so and avoid the throttle linkage?

Update:
So I picked up a 10" length of appropriate diameter radiator hose and looped it up and over the throttle linkage.
